Xiao Long Bao (小籠包):

The Irresistible Dumpling Delight from Taiwan

Xiao Long Bao, often referred to as “soup dumplings,” is a beloved culinary treasure that originates from Taiwan. They’re steamed dumplings that typically contain a mixture of minced pork or other fillings wrapped in a thin, delicate dough wrapper. What sets Xiao Long Bao apart is the addition of a flavorful broth, which is trapped inside the dumpling during the steaming process. As a result, each dumpling holds a small amount of savory soup, waiting to burst forth when bitten into.

Why is it a Must-Try in Taiwan?

Creating the perfect Xiao Long Bao requires exceptional skill. Skilled chefs meticulously fold the wrappers, ensuring they are thin enough to be translucent yet sturdy enough to hold the broth. The artistry involved in making these dumplings is part of what makes them so special. In addition, the moment you pop a Xiao Long Bao into your mouth, the rich broth melds with the pork filling, tantalizing your taste buds with an explosion of umami.

How to Enjoy Xiao Long Bao:

  1. Handle with Care: Xiao Long Bao are delicate, so handle them gently to avoid puncturing the wrapper and spilling the broth.
  2. Dipping Sauce: A common accompaniment is a mixture of black vinegar and fresh ginger. Dip the dumpling in the sauce before eating to enhance the flavors.
  3. Bite and Sip: Place the dumpling on a spoon, carefully take a small bite from the wrapper, and let the broth flow out. You can then sip the broth before savoring the rest of the dumpling.
  4. Temperature: Xiao Long Bao are typically served steaming hot, so be cautious when taking your first bite.

Why is Beef Noodle Soup a Must-Try in Taiwan?

The broth of beef noodle soup is the heart and soul of the dish. It’s usually simmered for hours with a combination of aromatics, spices, herbs, and sometimes soy sauce or fermented bean paste. This slow-cooking process infuses the broth with complex umami flavors and creates a truly comforting experience. Furthermore, the choice of noodles can greatly influence the dish. Taiwanese noodles are typically springy and absorb the flavors of the broth, creating a harmonious balance of textures and tastes.
